Vegetable Siomai

Para sa mga vegetarian, sa mga ayaw sa oil, sa mga under no-rice-policy, at sa mga di pwedeng kumain ng karne like me. Isipin nyo na lang siomai yan..
Ingredients:
For the Siomai:
•1 pc carrot, grated or diced in small pieces
•1 pc singkamas, diced in small pieces
•1 cup malunggay leaves, chopped
•3 cloves garlic, minced
•1 head onion, minced
•1 pc egg, beaten
•½ cup cornstarch
•½ tbsp iodized salt
•½ tbsp black pepper powder
•½ tbsp brown sugar
•½ cup soy sauce
•2 heads cabbage, large one if possible
•Spring onion for twining
For the Sauce:
•3 cloves garlic, chopped
•2 pcs siling haba
•3 tbsp soy sauce
•3 pcs calamansi, juiced
•Cooking oil
Procedure:
1. In a bowl, mix carrots, singkamas, malunggay leaves, onion, and garlic.
2. Add beaten egg, cornstarch, salt, pepper,sugar, and soy sauce. Mix thoroughly.
3. Soak cabbage leaves in hot water for 2 minutes and then drain.
4. Fill each cabbage leaves with vegetable mixture. Wrap the mixture and twine using spring onion.
5. Place to the steamer and let cook for 10-20 minutes.
6. Meanwhile, do the sauce. Sautè garlic in oil. Add soy sauce and the siling haba when the garlic is cooked. Then place the dipping sauce in the serving bowl. Add calamansi juice if desired.

Kutsinta

One of my favorite kakanin when I was young..


Ingredients:

•2 cups all purpose flour

•1 ½ cup sugar

•2 eggyolks

•3 cups water

•2 tsp lye water (lihiya)

•2 tsp vanilla extract, optional

•Anatto powder (atswete powder), the more you put the darker the color will be

Procedure:

1. Ihalo ang lahat ng nakalistang ingredients until well combined.

2. Salain ng dalawa o hanggang tatlong beses bago ilipat sa molde. Wag punuin ang molde, kalahati o lampas kalahati lamang ang ilagay, hanggang mga ¾.

3. Steam for 20-30 minutes until set. Pag luto na, wag agad tanggalin sa molde, hayaan munang mag set pa ito.

4. Serve with fresh grated coconut or with cheese on top.

Buchi

This is my first time making this at home. Thanks God I made it perfect. Recipe credit to a good friend. Thanks for teaching me patiently.


Ingredients:

•3 cups glutinous rice flour
•½ cup rice flour
•1 cup sugar
•1 ¼ cup water
•½ cup sesame seeds or as needed
•Choice of filling (chocolate, jam, sweetened beans, etc)
•Cooking oil for deep frying
•Extra water pang dip

Procedure:

1. Dissolve sugar in water.
2. Ihalo ang dalawang rice flour at dahan dahang ibuhos ang water dito habang minamasa.
3. Scope flour mixture or the so-called dough at bilugin. Then flatten on your palm at ilagay ang filling at i-seal at bilugin ulit. Ulitin lamang hanggang matapos at maubos ang flour mixture.
4. I-dip ang nabilog sa extra water at ipagulong sa sesame seeds. Quick dipping lang po para lang po dumikit ang sesame seeds at di matatanggal once we'll fry them.
5. Fry by batch until golden brown in low heat. Low heat lang po para di titigas ang buchi. And before putting buchi, dapat kumukulo na sa init ang oil. You can test by dropping sesame seeds on the oil or isang kurot ng dough. And to get the perfect bilog ng buchi, dapat di basta basta ihulog yung buchi sa oil, put it first on a spoon or sandok and ilubog kasama ang sandok, saka nyo na po bitawan ang buchi after seconds.

Graham Ball with Mallows

I made graham balls with marshmallow filling..

Ingredients:

•3 cups grahams, crushed
•1 ⅓ cups condensed milk
•Sprinkle candies for coating/extra crushed grahams
•Marshmallows for filling

Procedure:

1. Mix crushed grahams and condensed milk until well combined or until dough is formed.
2. Scope mixture and form into ball-shape figure; then flatten and put marshmallows at the center; seal and form back into ball-shape figure.
3. Roll into sprinkle candies or in extra crushed grahams.
4. Store in a clean food container. Chill if desired for longer shelf life.

Healthy Blend

I always make this especially after having heavy meals. It's a combination of apple, pineapple, and orange.

Hot And Spicy Crab

Food I can't resist! More rice please..


Ingredients:

•½ kilogram crab
•2 tsp hot sauce (just adjust kung ayaw nyo ng maanghang)
•1 tsp liquid seasoning
•½ cup ketchup
•1 tsp minced garlic
•1 cup water
•Salt and sugar
•Cooking oil

Procedure:

1. Heat oil in a pot. Sautè garlic until soft and fragrant.
2. Put the crab and cover mga 3-4 minutes.
3. Put hot sauce, liquid seasoning, ketchup, and salt. Stir and cover hanggang mag orange ang crab.
4. Add water and sugar, stir. Cover until sauce thickened.

Pork Binagoongan

Real Filipino food! Taste heaven..


Ingredients:

•Pork, hiwain into bite size
•Bagoong alamang
•Banana catsup
•Liquid seasoning (garlic)
•White sugar
•White vinegar
•Soy sauce
•Onion
•Garlic
•White pepper powder
•Salt to taste
•Water
•Cooking oil

Procedure:

1. Ilagay ang karne in a pot. Lagyan ng onion, garlic, white pepper, soy sauce, catsup, liquid seasoning, and salt. Isalang sa mahinang apoy hanggang pumuti at mangatas ang karne. (Note: Hindi po ako naglalagay ng tubig.)
2. Kapag nangatas na ang karne, haluin ng bahagya at takpan ulit hanggang lalabas pa ang mga katas.
3. Lagyan ng white sugar at konting tubig. Haluin at takpan hanggang lumambot ang karne.
4. Once malambot na ang karne, lagyan ng vinegar at takpan ulet. (Note: Do not stir pagkalagay ng vinegar.) Simmer.
5. Hanguin ang mga karne, separate meat and its sauce. Set them aside in different container. (Note: Wag itapon ang sauce, masarap sya sa kanin.😊)
6. Preheat the pan, lagyan ng konting cooking oil. Sautè another onion and garlic. Ilagay ang cooked meat and cook pa more until mag brown sila. This time lalabas yung mga oil ng meat, remove the excess oil kapag brown na ang karne. (Note: Wag nyong itapon yung excess oil, masarap sya sa bahaw o pang oil sa sinangang.☺)
7. After removing excess oil, lagyan ng bagoong alamang at hot sauce. Haluin until done. Malalamang done na sya kase medyo lalapot sya. Don't forget to adjust the taste according to your preference.

Tortang Sardinas (Sardines Omelette)

This can be used as burger pattie, too. And best serve with catsup or vinegar..


Ingredients:

•1 can sardines
•1 pc large egg
•1 pack Skyflakes, durugin
•1 head onion, minced
•3 cloves garlic, minced
•Salt and ground black pepper to taste
•Cooking oil for frying

Procedure:

1. Mashed the sardines with garlic, onion, salt and pepper.
2. Put the egg, then the skyflakes. Mix them up and set aside for a couple of minutes.
3. Fry by batch in desired shape.
4. Serve with your favorite dipping sauce.

Mussels Soup

My comfort food during cold season.

Ingredients:

•500 grams mussels, cleaned
•1 thumb sized ginger, pounded
•1 piece red bell pepper, sliced
•1 head onion, chopped
•3 stalks spring onions, sliced
•2 medium sized tomato, sliced
•Salt and fish sauce to taste
•Water as needed

Procedure:

1. Boil water in a pot.
2. Add the ginger, bell pepper, onion, and mussels. Add enough water just to cover the clams.
3. Bring to a boil, then simmer covered.
4. Once shells are opened, add the spring onions and tomato. Simmer for 2 minutes then season with fish sauce and salt.
5. Transfer to a serving bowl and serve.

Papaya-Pineapple Smoothie

Time to detoxify!

Ingredients:

•1 cup pineapple chunks
•½ cup papaya chunks
•¼ cup condensed milk
•½ cup ice cubes

Procedure:

Put papaya, pineapple, condensed milk, and ice cubes in a blender. Blend until smooth.

Homemade Fishball

Because I love fishball, I made my own fishball..

Ingredients:

•½ kilo fish (any kind)
•1 cup all purpose flour
•1 onion, finely chopped
•1 egg, beaten
•Spring onion, chopped
•Fish sauce, optional
•Salt and pepper to taste

Procedure:

1. Steam the fish and shred it then remove all the bones, when this process is done, add the rest of the ingredients and mix well.

2. Refrigerate for 30 minutes before making it into balls (this way is easier to form into balls).

3. Preheat the oil and when you are ready, use your hand to get a portion from the mixture and form into balls. Deep fry until golden brown.

4. Serve hot with your favorite dipping sauce.

•••Note: If the mixture is too dry, you can add a little water.

BASIC EGG OMELETTE

Breakfast: Beat egg with 2 tbsp water, salt and pepper powder. Fry and enjoy!

MANGO FLOAT

I always make this during occassions-birthdays, Christmas, New Year, when requested, and when I craved..

Ingredients:

•2 packs graham cracker
•¾ can evaporated milk (410ml can)
•½ can mango flavored condensed milk (subject for adjustment according to taste preference)
•2-3 pieces ripe mango

Procedure:

1. Mix condensed milk and evaporated milk in a bowl using wire whisk (If using electric hand mixer, mix until double in quantity.) Set aside.
2. Slice the mango. Set aside.
3. Arrange graham crackers on the bottom of a food container, spread milk mixture, put sliced mango, spread milk mixture again, put graham crackers..repeat procedure until you can make a layer.
4. Chill before serving.

CORN FRITTERS

Very satisfying! Good substitute for junk foods..

Ingredients:

•1 ½ cup cooked corn kernel (you can use canned sweet corn kernel too)
•1 cup all purpose flour
•1 tsp baking powder
•1 ½ tbsp white sugar
•¼ tsp salt
•½ cup fresh milk (you can also use evaporated milk or [1swak pack powdered milk+½ cup water])
•1 pc egg
•2 tbsp melted butter
•Cooking oil for deep frying

Procedure:

1. Mix flour, baking powder, sugar, and salt in a bowl. Set aside.
2. In another bowl, mix egg, milk, and melted butter.
3. Combine flour mixture and milk mixture.
4. Add corn kernel and mix.
5. Heat oil in a pan. Scope batter and drop into the oil until golden brown.
6. Transfer cooked fritters into a paper towel/tissue paper/clean paper.

PAKSIW NA BANGUS

Certified lutong pambahay, pamana ni inay😊..di gaanong halata na mapurol yung knife ko😛. I want to call this PAKSIW NA BANGUS. Why? Wala lang..trip ko lang😁. Alam kong alam na ng lahat kung paano magluto ng paksiw, but then again, gusto ko pa ring iShare sa inyo yung ginawa ko. Sa ayaw nyo't sa hindi, narito ang aking version..oo, version ko to..ako nagluto eh😁..

First and foremost, linisin ang bangus at ang mga rekados gaya ng luya, atsal (bell pepper), siling green (espada kung tawagin sa amin), at bawang at ilagay ang mga ito sa isang palayok o lutuan. Lagyan ng asin, white sugar, pamintang durog, suka, at konting tubig. Isalang sa mahinang apoy hanggang sa maluto. Kapag malapit ng maluto, patakan ng konting oil. Yan lang😊. So simple di po ba..? Hanggang sa muli..

TORTANG TALONG

Satisfying my cravings with this simple yet nutritious viand. I craved for something hot and tortang talong so I came up with this one. Combining my craving while playing with what's only available in my little kitchen😃..


Ingredients:

•2 pcs talong (eggplant)
•1 egg
•Drops of hot sauce
•Drops of liquid seasoning
•Dash of salt and black pepper powder

Procedure:

1. Grill the talong. Let cool and remove the skin. Flatten in a plate using fork.
2. In a small bowl, combine the egg, liquid seasoning, hot sauce, salt and pepper powder. Beat. After beating, pour onto the flatten talong. Set aside for minutes to let the talong absorb the egg mixture.
3. Heat oil in a pan and fry the talong until done both sides.
4. Enjoy!😃

SWEET AND CHEESY SPAGHETTI

For long life!


Ingredients:

•200 grams spaghetti noodles
•250 grams spaghetti sauce
•1 can corned beef
•1 small pack cheese
•¼ kilo ripe tomato
•2 pieces red bell pepper
•1 head onion
•3 cloves garlic
•1 piece beef cube
•¼ cup condensed milk (subject for adjustment based on taste preference)
•Salt and black pepper powder

Procedure:

1. Cook noodles with beef cube, salt and oil. Once al dente, remove from heat and let cool inside the pot. Do not wash the noodles, just put the pot over tap water. Strain when cool.
2. In a shallow pan, sautè onion, garlic, bell pepper and tomato. Smash the tomato and bell pepper. Add the corned beef and simmer. Put the tomato sauce and cheese. Season with salt and pepper. Cook the sauce well.
3. When the sauce is ready and done, turn off the heat. Add the strained noodles and toss to combine. Transfer to a clean and dry food container. Let cool completely before covering if you wish to chill it before serving. Mine, I prefer to serve it hot.

EASY MACARONI SALAD

Meet my easy macaroni recipe for all occassions..


Ingredients:
•250 grams Ram macaroni elbow
•410 ml Angel evaporada (blue label)
•300 ml Cowbell condensed milk
•35 grams Eden cheese, grated
•1 tetra pack Nestlè all purpose cream
•1 smallest can Today's fruit cocktail, strained
•1 Knorr chicken cube
•Salt and cooking oil

Procedure:

1. Put water, chicken cube, salt and oil in a pot and boil. Once boiling, put the macaroni elbow and cook. Once cooked, remove the pot from heat and place the pot over a pan/basin/pail with tap water. Let the pasta cool (do not wash) and when cool enough, strain to remove soup.
2. In a bowl/food container, mix milk, cream and cheese. Add the cooked macaroni and fruit cocktail. Toss to combine.
3. Chill before serving.

No-bake EGGLESS CHOCOLATE CAKE

No oven? No problem for you can also make your chocolate cake without any oven. I cooked this in a rice cooker. You can do it steamed or put directly in the rice cooker pot and cook like rice.


Ingredients:

For the bread/cake:
•1 cup all purpose flour
•1 tbsp baking powder
•1 cup white sugar
•1 cup cocoa powder
•1 tbsp cooking oil
•1 cup water
•Pinch of salt

For the frosting/topping:
•½ cup condensed milk
•2 tbsp margarine
•1 ½ tbsp all purpose flour
•2 tbsp cocoa powder
•Pinch of salt
•Candies/chocolate coated pretzels

Procedure:

1. Combine flour, baking powder, sugar, and cocoa powder in a mixing bowl. Mix them.
2. Add the oil and water. Mix until smooth or no lumps.
3. Brush/grease the inside of the rice cooker caserole with margarine (or baking pan if you'll gonna steam this). Pour flour-water mixture (batter) and set aside for atleast 15 minutes to allow the baking powder to work.
4. Turn on the rice cooker and cook the batter. In this process, expect the rice cooker indicator to return on warm, if it happens, just push back the indicator to continue cooking. Do toothpick test to test if it's done. Once cooked/done, remove the caserole and let completely cool before unmolding.
5. Do the frosting. (Do this when the cake is ready-cool and unmolded.) In a pan, put the milk, salt, cocoa powder, and all purpose flour. Turn on the heat and cook. Stir constantly so it won't stick at the bottom until thick. Turn off the heat and add the margarine. Stir to melt and distribute the margarine. Pour onto the cake and spread.
6. Top with candies (mine, I put sprinkle candies and nips) or any decorations you want.

NOTE: If steaming, steam for 30-45 minutes.

AMPALAYA WITH EGG

My easy yet very nutritious meal.


Ingredients:

•¼ kilo ampalaya, cleaned and sliced
•1 large egg, beaten
•3 cloves garlic, crushed
•1 head medium onion, chopped
•Salt, according to taste preference
•Liquid seasoning (Maggi Savor)

Procedure:

1. Heat drops of oil in a pan and sautè onion and garlic, as usual, I sautèd them all at once.
2. Put the sliced ampalaya and cover for a minute and sautè.
3. Season with salt and liquid seasoning according to taste preference. Add the egg and stir.
4. Cover and cook until done.
5. Serve.

GINISANG UPO WITH SARDINAS

My healthy and budget-friendly vegetable recipe.


Ingredients:

•320 grams upo (equivalent to 1 upo), cleaned and chopped
•1 can sardines (hot like Family’s sardines)
•1 head onion, chopped
•4 cloves garlic, crushed
•Cooking oil for sautèing
•Salt to taste

Procedure:

1. Sautè onion and garlic. Add the upo and cover until softened a bit, just to allow the juice of the upo to come out naturally.
2. Pour-in the sardinas and stir. Cover to simmer until cooked. You can add little amount of water if you want it bit soupy. Mine, I add ½ can water (I used the can of the sardines).
3. Season with salt according to taste preference.
4. Serve while it’s hot.

 

RADDISH SALAD WITH DRIED FISH (dilis)

One of my favorites. Real Filipino food.


Ingredients:

•Dilis (dried fish)
•Labanos (raddish)
•Tomato
•Onion
•Vinegar
•Soy sauce
•Salt and white sugar to taste

Procedure:

1. Fry dilis in a bit cooking oil until crisp. Set aside.
2. Combine labanos, tomatoes and onion in a food container. Put-in the fried dilis; season with salt and sugar and add soy sauce according to taste preference. Add vinegar and toss to combine. Enjoy!

FISH LUMPIA

My choice! I love this when dipped in vinegar with crushed chili.


Ingredients:

•450 grams yellow fin tuna (or any fish)
•¼ cup celery, chopped
•¼ cup carrot, minced
•1 small onion, chopped
•3 cloves garlic, minced
•3 tbsp spring onions, chopped
•1 fresh egg
•½ pork bouillon
•2-3 tbsp fish sauce
•Black pepper to taste
•Spring roll wrappers/lumpia wrapper
•Cooking oil for frying

Procedure:

1. Place fish in a pot and pour enough water to cover the fish. Simmer over medium low heat until cooked. Drain and flake the fish.
2. Add cooking oil in a preheated pan. Sautè onion, garlic and flaked fish over low heat for a few minutes.Add pork bouillon. Season with fish sauce and pepper. Stir until combined. Turn off heat and set aside in a bowl.
3. In a mixing bowl combine, sautèed fish flakes, minced carrots, spring onions, celery and egg. Mix until well combined.
4. Scoop about 2 tablespoonful of mixture and place it in center of the wrapper. Fold and seal all edges using water. Roll and set aside.
5. Add cooking oil in a preheated pan. Fry the rolls in batches until golden brown. Drain excess oil.
6. Serve with sweet chili sauce or ketchup.

Note: Fry one lumpia roll before wrapping them all to test the taste. Adjust seasoning according to your preferences.

TIKOY

Tikoy is one of the traditional centerpieces of our Chinese friends during Chinese new year. It can be served fried like dipping sliced of it in a beaten egg or wrap it with lumpia wrapper and fry or fry it in butter. Because I craved for it, I made my very own and here's how I made it..

Ingredients:

•2 ½ cup glutinous rice flour
•2 cups water (or milk or 1:1 milk water)
•1 cup white sugar

Procedure:

1. Mix the 3 ingredients above.
2. Grease the baking pan with oil.
3. Transfer the mixture into the greased pan.
4. Steam the mixture for 35 minutes to 1 hour. If you seen that its edge pull away from the baking pan, it's done.
5. Let cool and transfer into cellophane and place on fridge or in a cool place.

GRAHAM BALLS

Best thing to do as bonding moment with our siblings or kids if already have. I enjoyed doing this very much!


Ingredients:

•3 cups graham crackers, crushed (equivalent to 220 grams pack, retain small amount for coating about tablespoonful)
•1 ⅓ cup condensed milk
•Sprinkle candies for coating

Procedure:

1. Combine condensed milk and crushed graham crackers in a mixing bowl. Mix using spoon until dough is formed.
2. Spoon mixture and form into ball-shaped figure.
3. Coat balls in more crushed grahams or sprinkle candies.
4. Chill.

BOURBON CHICKEN

My new found chicken recipe-for a change. I cooked it with love, passion, and excitement.


Ingredients:

•16 pieces chicken (any part)
•¼ cup brown sugar
•¼ tsp garlic powder
•1 tbsp minced garlic, optional
•¼ tsp powdered ginger (or turmeric)
•¼ cup soy sauce
•2 tbsp catsup
•¼ cup bourbon (or apple juice)
•Oil for pan greasing

Procedure:

1. Lightly coat pan/skillet with cooking oil and place chicken in a single layer.
2. In a small bowl, mix the remaining ingredients. Pour the mixture evenly over the chicken.
3. Cover and cook over medium heat for 20 minutes or more or until chicken is no longer pink inside, turning chicken often to prevent from sticking.
